1 qt Chicken Stock
0.5 oz Roasted Yerba Mate
1 cup Arboreo Rice
1/2 cup Dry White Wine
4 oz Onions, small dice
8 oz Farm Cheese, medium dice
1 oz Butter, clarified
1oz Pine Nuts, chopped
salt, black pepper
1. simmer the Roasted Yerba Mate in the Chicken Stock for about 5 minutes
2. roast the pine nuts until crunchy
3. sweat the onions on the clarified butter
4. add the rice and parch it
5. add the wine, let it a sec
6. start adding the filtered stock, always mixing to release the starch
7. when the rice is almost done, reduce the fire, add the cheese and mix it energetically, until the rice is al dente
8. serve it with the roasted pine nuts
